Initial commit: xmcp — OpenAPI-to-MCP server

MCP server generated from an OpenAPI document with FastMCP v4.
Configurable via env vars (spec URL/file, transport stdio/http,
host, port, API token), built with uv, multi-stage Dockerfile
with non-root runtime.
